Pesto Chicken

Serves 4


  •  4 chicken breasts
  • 1 pack green pesto
  • 300ml single cream
  • 2 packs microwave rice (we like the tilda basmati)


  • sundried tomato to garnish
  • parmesan cheese to grate over



  1. Pan fry the chicken breasts in a non stick pan on a medium heat until nicely golden (5-8 minutes per side)
  2. Stir in the cream and red pesto and bring slowly to a simmer
  3. Cook rice per the packet instructions
  4. Remove the chicken fromt he pesto mix, check it is cooked all the way through - if not return to the pan for a further 5 mins and check again
  5. Add the rice to the cream and pesto mix, add a little water if needed to loosen it up
  6. Serve the rice with the chicken on top and sprinkle over the diced sundried tomatoes and grate over a little parmesan if using.
