Prawn Thai Green Curry


  • 16 large raw tiger prawns
  • 2 handfuls spinach/ribboned courgette/any other leafy greens
  • 1 pack Thai Green paste
  • 1 tin coconut milk
  • chilli slices and coriander to serve and garnish (optional)

Put the paste in a pan, cook for 30secs to get the flavours going, add the coconut milk. bring to a simmer. Add in the raw prawns and spinach, once the prawns are pink its done. It will take about 5-10mins. garnish with chilli and coriander, serve with fluffy white rice.
