Salmon Pesto


  • 2 fillets of boneless skinless salmon
  • 100g cherry tomatoes (halved)
  • 150g fine green beans (trimmed)
  • 1 pack Pesto
  • baking parchment


Place the salmon and veggies in baking parchment, top with pesto then fold the parcel together. Place in a medium oven for 25 mins or until the salmon is cooked. Serve with new potatoes.
