Spring vegetable omelette with Pesto
Fresh, healthy and super speedy. Serves 1.


  • 1/2 pack Taste Collectiv Pesto;
  • 2 large free range eggs;
  • Handful of fresh podded peas;
  • Handful of fresh soya beans;
  • 1 courgette;
  • 50g of feta cheese;
  • Handful of fresh rocket leaves.


  1. Whisk the eggs with a pinch of salt and pepper;
  2. Pour into hot non stick frying pan, greased with a little coconut (we like coconut as its neutral and doesn't deteriorate with heat, but use whatever you normally do!) oil;
  3. When the omelette is just set, tip onto your plate;
  4. Top with the fresh leaves and vegetables, we ribboned the courgette with a vegetable peeler;
  5. Crumble over the feta;
  6. Drizzle on some pesto.
