Tex-Mex Bean Chilli

Ingredients

  • 1 pack of Tex-Mex
  • 1 tin of beans drained (haricot, canelini and borlotti all worjk well)
  • 1 courgette
  • 100ml water
  • white rice to serve

Optional

  • tortilla chips

Method

  1. Pan fry the diced up courgette in a little oil
  2. Add the tex mex to the pan with the beans and 100ml of water
  3. Bring to a simmer for 5 mins
  4. Serve with fluffy white rice and tortilla chips
