Rocket Pesto Salmon
Ingredients
- 1 pack of Rocket Pesto
- 4 salmon fillets
Optional
- new potatoes and crispy salad to serve
Method
- Grill the salmon on a medium heat for 15mins turning regularly until cooked
- Pour the rocket pesto over the salmon fillets whilst they are hot
- Serve with new potatoes (i covered mine in herby butter) and crispy salad.
The pesto easily covers 4 fillets - but you can use half a pack and stick the rest in the freezer for another day.
