Rocket Pesto Salmon

Ingredients

  • 1 pack of Rocket Pesto
  • 4 salmon fillets

Optional

  • new potatoes and crispy salad to serve

Method

  1. Grill the salmon on a medium heat for 15mins turning regularly until cooked
  2. Pour the rocket pesto over the salmon fillets whilst they are hot
  3. Serve with new potatoes (i covered mine in herby butter) and crispy salad.

The pesto easily covers 4 fillets - but you can use half a pack and stick the rest in the freezer for another day.
